Ingredients:
- Quinoa, cooked according to package directions
- Tortillas
- Red and green peppers, cut into cubes
- Fresh strawberries, cut into pieces
- Red onion, thinly sliced
- Avocado
- Black olives, pitted
- Extra virgin olive oil
- Lemon juice
- Salt and pepper
Instructions:
Mix the quinoa with the chopped vegetables and strawberries. Add the olives and onions. For the dressing, mix extra virgin olive oil with lemon juice, salt and pepper. Pour the dressing over the salad and toss well. Served with tortillas fresh out of the oven, accompanied by the magnificent OlivaRico olive oil.
