Ingredients:
- Eggplant, cut into cubes
- Ripe tomatoes or canned tomatoes
- Onion, finely chopped
- Extra virgin olive oil
- Garlic, crushed
- Salt, pepper and herbs (oregano, basil)
- Optional: feta cheese for serving
Instructions:
Saute onion and garlic in our extra virgin olive oil. Add the eggplant and tomatoes, then season with salt, pepper and herbs. Cook until the eggplants are soft and the stew thickens. Serve with feta cheese on top, if desired.
